Chipotle coffee pulled pork- yes, coffee

2 of my major loves in life are my slow cooker and meal prep.

Throw a new pork roast recipe and I’m positively swooning. If you haven’t checked out Plaid and Paleo, Vanessa is incredibly talented and has a wealth of delicious recipes.

As usual, I doubled this baby to get the most food out of it and slashing the amount of time I have to spend in the kitchen during the week. You could roast some sweet potatoes and broccoli rabe like I did as the perfect accompaniment to this protein. The three together were the perfect match.

Chipotle Coffee Pulled Pork: 

  • 2.5 lb boneless pork shoulder. 
  • 1 tbls chili powder
  • 1 tbls garlic powder
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • 1/2 cup strong brewed coffee
  • 1 tbls ghee or olive oil

 

 

 

Rub down that pork with the ghee or olive oil (if already fatty like the cut shown above, that step is probably unnecessary).  Once coated, sprinkle and cover with the spices turning so that the pork shoulder is coated then cover with the coffee.

 

 

 

 

 

 

Cook on low for 6-8 hours until fall-apart tender. Remove from slow cooker and liquid.  Let cool to room temp or near and pull apart using two forks.  You now have a tender and flavorful protein to pair with veg and carbs of your choice for the week!
