Moroccan Madness!

I really enjoy cooking- when I have the time.  More than that, I love having healthy, home-cooked food ready to eat.  My work schedule means that I am not home for dinner so I must make it ahead of time.  I generally cook up and make enough for 4-5 days and then store in glass containers ready to roll.  One of my favorite tools in the kitchen is my tagine.

Have you ever heard of a tagine? Think of a Moroccan 🇲🇦 Dutch oven or slow cooker. This beautiful tagine comes from Pure Atlas in Palm Springs- Not Morocco… yet! These tagines could almost be a piece of stand alone art in the living room on a shelf they are so beautiful LOL. There are lots of great recipes that commonly use lamb, chicken and beef. Delicious tidbits like dates, figs, apricots, pistachios and spices like cinnamon, nutmeg, paprika and tumeric. Using the tagine is a great way to use up leftovers like I did today.

Today’s tagine included: 🍗
Parika
Pepper
And I cleaned out the veg drawer:

Onion
Garlic, red peppers and mushrooms

Cook for 2.5 hours at 300.

Good food for the next couple of days and (hint) this makes a super fun and EASY dinner party meal! Just add wine and friends
